Prepare Grapes For Fermentation
After the harvest, grapes head to the winery. The winemaker decides whether or not to remove the stems or to ferment grape bunches as whole clusters.
This is an important choice because leaving stems in the fermentation adds astringency but also reduces sourness. As an example, Pinot Noir often ferments with whole clusters, but not Cabernet Sauvignon.

How To Store And How Long Does Homemade Muscadine Wine Last
Always store your homemade Muscadine wine in a cool place.
The shelf life of your homemade wine depends on two factors: how well the containers, tools, and bottles were sanitized and if you used sulfites in the making of the wine.
Our recipe calls for sanitized bottles but not for sulfites. The clean bottles guarantee that there will be no bacterial growth or mold, but the lack of sulfites does shorten the shelf life. Sulfites are additives that help preserve foods and beverages, and without them, products don’t last as long.
Because the mixture lacks sulfites, it should be consumed in three to six months. However, any faulty smell, the appearance of mold, or any change in texture should be sufficient alarm for you to get rid of the wine. This means that the containers, tools, or bottles were improperly sanitized.
Add Airlock Top Up With Cold Water
Boil the airlock for a couple of minutes, getting some of the boiling water to run through the lock. Remove with tongs or a spoon, leave a small amount of boiled water in it and stick in the hole in your bucket, leave for 3 hours then top up to 23 litres with cold water.
The instructions with the bucket said to leave the edge of the bucket lid lifted to let the CO2 out instead of using an airlock but I was worried about backflow and contamination so I drilled a hole and added a rubber gasket so I could use an airlock. My friend Mike said that his elferflower brew used to ferment so violently it would blow all the water out of the airlock but I haven’t had this happen with grape wine.

Red And White Wines Are Made Differently
We all know the basics. Wine comes from grapesor rather, from fermented grape juice. It follows, then, that red wine is derived from red grapes and white wine comes from white grapes, right?
Not necessarily. Whether red or white, virtually all grapes produce clear juice. The secret to a wines color lies not in the pulp, but in the skins. When making white wine, the grape skins are removed before fermentation, resulting in a clear juice that ultimately yields a transparent white wine. Usually, those skins are white, but many white wines are actually made from red grapesa style known as blanc de noir.
During the production of red wine, on the other hand, the skins remain in contact with the juice as it ferments. This process, known as maceration, is responsible for extracting a red wines color and flavor.
Think of it like steeping a bag of tea: the longer you allow the leaves to remain in contact with the boiling water, the darker, richer, and more intensely flavored your brew will be. The same principle applies to wine. Longer maceration times result in deeper-hued reds, with more intense flavors. This is why light-skinned grapes like Pinot Noir produce a fresher, brighter style of red, whereas thick-skinned grapes like Cabernet Sauvignon yield more power and concentration.
Bottle Aging & Release Timing
Now that the bounty of rich, red wine is ready to bottle, one last decision remains. Line up the barrels, get your filters and bottling line in place, and rack it up. Do you release the wine immediately or hold it for a few years? Some regions legally mandate a designated wines age . Some producers simply will not release a wine until they deem it ready .

The skins of the grapes contain most of the pigment, and during fermentation, a lot of this color is imparted into the wine. This is also where much of the tannin in wine comes from as well as the antioxidants and polyphenols that make red wine healthy come from.

There are a couple of noted Cabernet Sauvignon flavors that are intimately tied to viticultural and climate influences. The most widely recognized is the herbaceous or green bell pepper flavor caused by pyrazines, which are more prevalent in underripened grapes. Pyrazine compounds are present in all Cabernet Sauvignon grapes and are gradually destroyed by sunlight as the grape continues to ripen. To the human palate this compound is detectable in wines with pyrazine levels as low as 2 nanograms per liter. At the time of veraison, when the grapes first start to fully ripen, there is the equivalent pyrazine level of 30 ng/l. In cooler climates, it is difficult to get Cabernet Sauvignon grapes to ripen fully to the point where pyrazine is not detected. The green bell pepper flavor is not considered a wine fault but it may not be desirable to all consumers’ tastes. The California wine region of Monterey was noted in the late 20th century for its very vegetal Cabernet Sauvignon with pronounced green pepper flavor, earning the nickname of “Monterey veggies”. In addition to its cool climate, Monterey is also prone to being very windy, which can have the effect of shutting down the grape vines and further inhibiting ripeness.

In the late 1970s, a historic pinot noir winery in Oregon had to make cabernet sauvignon from purchased grapes just to pay the bills because, at the time, no one was buying Oregon pinot. They hated doing it because it felt like selling out. But having had the opportunity to taste one of those cabs from the 70s, it proves that a wine is a reflection of its maker, because I found the wine is wonderfully well-made, balanced, and long-lived. How Is White Wine Made
You probably realize that the skin of white wine grapes is not white. Visit a vineyard and you will find yellow to green grapes. Sauvignon Blanc, Chardonnay, and Pinto Gris are popular white wine varietals.
White wine can be made from red grapes or a mixture of both. This is a fairly common practice. For example, White zinfandel is made from red grapes.
French Champaign is made from chardonnay, pinot noir , and Pinot Meunier . It is called Blanc de Noir which means white from black.
If red grapes are used the grape skins are filtered out right after pressing to release only the yellow juice into fermentation.
The clear juice is transferred to stainless steel tanks for fermentation. White wine fermentation is usually at lower temperatures than red wines preserving bright fruit flavors. Here the grape sugars are converted into alcohol.
Some whites, like many chardonnays, are moved to oak barrels go through malo-lactic fermentation. This imparts flavors like nuts, vanilla, and creaminess. People often describe this as buttery.
