Silver Oak was started in 1972 with a simple driving philosophy to focus production on only one varietal, Cabernet Sauvignon. Whats more, they resolved to create a wine with a style all its own: not another hard, tannic red wine requiring years of aging to enjoy, but a wine of fully developed flavors and a velvety soft texture on the day it is released for sale.

Silver Oak produces Cabernet Sauvignon from two appellations. Their Napa Valley derives its fruit from both owned and contracted vineyards, and is produced entirely at their Oakville winery. Beginning in 1994, small amounts of Cabernet Franc, Merlot and Petit Verdot have been included in their Napa blend to add complexity and softness.

Silver Oak also produces stellar Cabernet from their Alexander Valley vineyards. A critical reason for the success of this wine, and every wine they make, has always been that they create the final blend before aging it in American oak barrels and then bottles. Over the course of four-and-a-half years, the wines flavors, aromas, and textures have an opportunity to meld with one another and the woods delicate qualities to create the kind of graceful cohesion found only in the worlds most elegant wines.

The new I.W. Harper Cabernet Cask Reserve bourbon, according to those behind it, is aged for four years in new charred American oak barrels, then finished in California Cabernet Sauvignon casks and bottled at Stitzel-Weller Distillery. The bourbon clocks in at 90 proof .

I.W. Harper Bourbon History

IW Harper whiskey was first produced by the Bernheim Brothers Distillery back in the late 1870s. You may be familiar with the name Bernheim. Theres the Bernheim Distillery in Louisville, KY, where Heaven Hill currently produces its whiskeys, Bernheim Arboretum and Research Forest and Bernheim Original Wheat Whiskey, also produced by Heaven Hill. So who was this Bernheim?

Who was this I.W. Bernheim?

Well, Isaac Wolfe Bernheim was a German-Jewish immigrant who first arrived in the US back in 1867. He was not a distiller at the time. He eventually found work as a bookkeeper either for two distillers or a wholesale liquor company, depending on which source you believe. Eventually, after earning enough money, he brought his brother to the US and the two started a distillery of their own, called Bernheim Bros. They eventually started blending whiskey and released a brand of their own.

Whats with the I.W. Harper name?

So why is this brand called I.W. Harper and not I.W. Bernheim? Well, because of the social climate and prejudices at that time, the Bernheim Brothers felt that it was best to have an American sounding name. So I.W. Harper was born.

The 2016 season earned 98 points from Robert Parkers Wine Advocate, making it one of the greatest ever for California Cabernet, which means there’s never been a better vintage of iconic Silver Oak to add to your collection.

Silver Oak has helped drive American interest in fine wine since the 1970sa fact that can help explain their ascent, but doesnt scratch the surface of what has kept Silver Oak at the top for nearly 50 years. For that, we can thank the Duncans far-sighted dedication to quality, which begins long before the first drop of Cabernet hits one of their custom American oak barrels.

Our real push for nearly 15 years has been in a philosophy of precision viticulture, third-generation vintner Matt Duncan told us when we caught up over the phone. Since 2006, Silver Oak has worked with a company called Fruition Sciences. It has opened up this whole new avenue in how we think of vine vigor, water, and canopy management, Matt said about the partner whose services are also tapped by OVID Napa Valley and Colgin, California icon Ridge, and Bordeaux First Growth Château Latour.

Since then, the vineyard team has recalibrated and implemented new technologylike sap-flow sensors that provide real-time data. This allows the team to time irrigations more accurately, which reduces water use and improves wine quality.

This is the second flavored release from Portland, Oregon-based Eastside Distilling, which last fall unveiled its Marionberry Whiskey. While Marionberrys flavoring came from Oregons native Marionberry, this expression is flavored with Luxardo cherry liqueur. Its also pricier than Marionberry, whose retail price is $29.

Technically these are not whiskeys, of course, as they fall below the required 40% ABV threshold. Eastside recommends this release as a cocktail component, which tends to be the best use for these flavored expressions, though some people like to sip them neat with ice. Both Beam and, more recently Jameson, have come out with similar flavored releases for this purpose.

Our 2016 Alexander Valley Cabernet Sauvignon is ruby in color with a magenta rim. It has an enticing nose of cassis, blackberry, vanilla, sage and spearmint. Upon entry, this wine builds from potpourri and bramble to a bright pop of raspberry on the mid-palate. A juicy finish with chewy tannins and a medium length, it will provide drinking pleasure through 2042 with proper cellaring. 94.6% Cabernet Sauvignon 4.0% Merlot 0.5% Petit Verdot 0.5% Cabernet Franc 0.4% Malbec.

Our 2016 Alexander Valley Cabernet Sauvignon is comprised of 94.6% Cabernet Sauvignon, 4.0% Merlot, 0.5% Petit Verdot, 0.5% Cabernet Franc and 0.4% Malbec. In early 2017, the final blend was transferred to American oak barrels from our cooperage, The Oak, where it aged for 24 months. Half the barrels for our 2016 Alexander Valley vintage were new, providing a subtle, layered expression of bay leaf, coconut and vanilla to our wines. Blending before barrel aginga signature of our winemaking styleallows blends to be based on the inherent qualities of their vineyard components before oak influence. Vintage to vintage, the resulting Cabernets emerge integrated and ready to drink upon release.

Review: Iw Harper Bourbon Cabernet Cask Reserve

I.W. Harpers lineup includes two different, sourced expressions, and now theyre joined by a third, which is again a departure for the brand. This is a 4 year old Kentucky bourbon that is finished in casks that held cabernet sauvignon wine from California. Other than that , details are scarce.

Lets try it all the same.

The bourbon is pretty on the nose, though a bit punchy with alcohol at first. Notes of sesame and heavy florals, almost perfumed at times, dominate. Toasty oak kicks things off on the palate, which offers notes of creamy nougat, some peanut shell, lots of burnt caramel, and ample vanilla all the trappings of a classic bourbon. What I didnt initially get in this whiskey is any real sense of the cabernet sauvignon cask until well into the finish, where a bright note of red fruits, perhaps currants, abruptly comes into focus. That kind of fruity sweetness, touched with black pepper here, wouldnt be out of place in some standard bourbons , but here it does feel amped up, at least a bit. Bright and clean and wholly exuberant, the berry notes are just a layer of spice atop an otherwise solid whiskey that feels far more versatile and immediately approachable than one would expect.

The food was fine, just like any other Vietnamese restaurant. The waiters are okay but the waitress was very impolite and rude. We ordered two different bowls of noodles. When asked about the size, I answered large, assuming for both bowls. As the bowls were being served, I saw one bowl of regular and another bowl of large. While puzzled, the waitress was yelling loud, Who ordered the large bowl? We had no clue! When trying to ask about the exact labels of the bowls, she was getting so impatient and just dumped the bowls arbitrarily right in front of us. Later, I asked another waiter to sort out the exact ingredients of the bowls. We finally figured out what exactly should have been served to us. This was just a simple matter, yet we were greeted with such an ill-mannered individual initially. There are so many other similar restaurants in the neighborhood, the closest one being at Yonge/Weldrick . I would definitely recommend people to seek alternatives. In this hectic world with busy lives for people, typing this paragraph was not the best use of my valuable time.
