Silver Oak Napa Valley Cabernet Sauvignon comes from Silver Oak Cellars and their Napa Valley Winery in Oakville, California, USA.

Their Napa Valley Winery is one of two main wineries operated by Silver Oak. They also operate their Alexander Valley Winery in Healdsburg, California.

Silver Oak got their start in 1972, operating out of a dairy barn in Napa Valley and producing just 1,100 cases of Cabernet Sauvignon their first year.

They were founded by Raymond Twomey Duncan and Justin Meyer.

As the years went on, Silver Oak grew their reputation as one of the premier producers of Cabernet Sauvignon.

Nowadays, Silver Oak is run by the Duncan family whove been operating the winery as a family business since 2001.

    What Is The Difference Between Reposado And Aejo Tequila

    Reposado Tequila is lighter in color and flavor than an because it is not aged as long. Reposado is aged between two months and just under a year, while Añejo is aged for one to three years. Another distinction is that Añejo Tequila must be aged in an oak barrel no larger than 600 liters. By contrast, Reposado can mature in any size oak container. Spending more time in a smaller oak container gives Añejo a deeper color and more flavor.

    How Much Does Winetasting Cost

    Prices for these experiences vary widely. At most wineries, basic tastings usually run between $30 and $50 per person. Many wineries refund the price of one tasting with each bottle purchased. More involved tastingsthose that feature rare wines or are paired with food coursestend to be more expensive, and they can range anywhere from $75 to $125 per person. These higher-dollar tastings rarely include rebates for bottles purchased.

    Almost every winery offers a wine club, a subscription-based opportunity to receive regular shipments through the year. Generally speaking, wineries offer 10 to 20 percent discounts on tastings for members of these wine clubs if you join the club when you visit, you get the discount before you go.

    One more thing: Tips are not expected but always appreciated. You can leave gratuities however you feel most comfortableas cash or on a credit card bill.

The Twomey Sauvignon Blanc beautifully combines citrus, pear and green apple characters in a complex and balanced expression of this exciting varietal. It has a light straw color and a nose of grapefruit rind, juniper berry, star fruit, green apple, pear and elderberry flower. It has a juicy, fruit-sweet attack with notes of honey and citrus on the palate. The wine has a long, lingering, fresh fruit finish. Notes from the winery: We grow Sauvignon Blanc on two estate properties: our vineyard surrounding our Calistoga winery and our Westside Road Vineyard below our winery in Russian River Valley. The soil and climate differences at these two sites gives us a range of expressions of Sauvignon Blanc that we blend to create our unique style. The Napa Valley fruit offers us a deft balance of citrus and mineral elements which is complemented beautifully by the guava and tropical notes from our Sonoma County fruit. I live in Washington and we have some very good wines but havent found one I like as much as Silver Oak.   • How Is Tequila Reposado Made

    All Tequila starts with the blue agave, a spiky succulent that grows throughout the regions where Tequila is made. For a Tequila Reposado, the sweet sap in the heart of the blue agave is fermented, distilled, and then aged for two to 12 months in oak.

    • Making Reposado Tequila takes patience. The blue Weber agave plant grows slowly. The succulent must be six or seven years old before it develops a sugary sap called aquamiel that forms the base of Tequila.
    • The heart of the agave plant called the piña is harvested with machetes. Then the massive hearts, which weigh 100 pounds or more, are steamed or baked in a clay oven. Experts say baking is better because the cooking process is slower and creates a smoother spirit.
    • The cooked hearts are shredded and pressed to extract the juice. That juice is fermented, and then the fermented juice is distilled in either a column still or an old-fashioned pot still. During the distillation process, Tequila retains much of the vegetal, floral, and earthy flavors coming from the agave.
    • To make a Reposado Tequila, the distilled spirit will be aged in an oak container of any size for anywhere from two months to just less than a year. During that time, it turns a deeper amber color. It can take on barrel characteristics such as vanilla, cocoa, and baking spice notes.

    Where Does Reposado Tequila Come From

    is a distilled blue agave spirit that only comes from one place on earth: Mexico. A Tequila Reposado is aged in oak for two to eleven months before bottling.

    Unlike some other spirits, Tequila production is governed by a strict set of laws. The spirit dates back to 1666 in Mexico, and its regulated to protect the quality. To be called Tequila, the spirit must come from one of five Mexican states: Jalisco , Guanajuato, Nayarit, Michoacán, or Tamaulipas.

    There are other spirits distilled from agave, but those are called either mezcal or destilado de agave. Similar to the rule in the US for Bourbon Whiskey, all Tequilas are , but not all Mezcals are Tequila. The oldest Tequila distillery is Grupo José Cuervo, makers of , which was founded in 1758.

    I did this review with my good friend, Big Al, whos made regular appearances here in helping out with reviews.

    Together, we tasted the 2012 vintage of this wine.

    Notable about the 2012 vintage, weather was cooperative and led to an exceptional growing season and a gift from Mother Nature according to Silver Oaks tasting notes for this wine.

    One thing I wasnt aware of was that Silver Oak Napa Valley Cabernet Sauvignon is not 100% Cabernet Sauvignon.

    Its actually a blend of the following, for the vintage we tasted :

    • 80% Cabernet Sauvignon
    • 7% Cabernet Franc
    • 3% Petit Verdot

    And finally, Silver Oak says this vintage can cellar all the way to 2037, if cellared properly.

    Silver Oak Cellars is a family-owned, Napa Valley winery that was started by Ray Duncan and Justin Meyer in 1972. The company currently has two wineries, one in Oakville in the Napa Valley and one in Healdsburg in the Alexander Valley. Its devoted entirely to the production of cabernet sauvignon wines. It also owns the Ovid and Soda Canyon Ranch vineyards in the Napa Valley.

    A sister company, Twomey Cellars, which the family established in 1999, is devoted to the production of Pinot Noir wines. Twomey has wineries in Calistoga, Healdsburg, Philo and Dundee, in Oregons Willamette Valley.

    Today the company is run by Rays sons. David Duncan is the President and CEO and Tim Duncan serves as Executive Vice President.

    Silver Oak is one of Californias most iconic producers. Its wines have achieved near cult status among enthusiasts. Its two wineries are considered the greenest wineries in the world, exhibiting a commitment to sustainability and minimizing its environmental footprint long before such objectives became fashionable. Its also the only winery to possess their own oak cooperage.

    Recently I sat down with David Duncan to talk about Silver Oak and Twomey, their contrasting wine making philosophies and their future prospects.

    Silver Oak Cellars had its first vintage in 1972, which was their Alexander Valley Cabernet Sauvignon. In 1979 they produced their first Napa Valley Cabernet Sauvignon, and to this day, these are the only two wines that are produced by Silver Oak Cellars.

On the palate, it has a rich, mouth-coating attack, great expression of fruit, a full-body and beautifully integrated tannins that lead to a long, spicy finish. Given proper cellaring, this wine will give drinking pleasure through 2026.”

    The best way to sample a winerys offerings is to pony up for a formal winetasting. As the name implies, this is your chance to taste some of the winerys current releases.

    Others incorporate food, chocolate, and other delicious treats into the mix. Across the Valley, many tastings are seatedmeaning you and your traveling companions sit as you would at a restaurant, and a server or host brings the wines to you. Some wineries also still use tasting bars at these, you simply walk up to the bar and stand while you sip. Hosts do their best to facilitate your tasting, providing general tasting notes before you sample, then checking back after you sip to answer questions you might have.

    Many wineries require appointmentsespecially when youre aiming to taste rare wines or have a food pairing. To make these, go to the winerys website or call.

    Once youve sat for a tasting, dont rush. Basic tastings last about an hour, while more involved tastings can go anywhere from 90 minutes to two or three hours. Remember that you dont have to drink every drop of each wine tables and bars always are equipped with dump buckets into which you can pour any wine youd rather not drink.
