Cheers! My last post of 2013 is this Pineapple Coconut Champagne Cocktail. The perfect sip to end a fantastic year and start a new one. And at the end of the post is a round up of my top recipes of the year.

Can you believe 2013 is over? I can’t. This year has FLOWN by. Scary how fast it has flown by. I think we say this at the end of every year.

At the end of every December I try to come up with a new, fun bubbly cocktail to ring in the New Year. Not every New Year’s cocktail I make has bubbles but I do have adding them as an option. I go for Prosecco, but you can go with any champagne or sparkling wine you like.

I of course had to make a pineapple and coconut cocktail for this year’s New Year’s eve celebration. And it is a simple cocktail, just a few ingredients.

You can’t skip out on the flaked coconut rum on the glasses. I love a sparkling sugar rim or something like coconut flakes to add a little more pizazz to cocktails.

For final post of the year I figured why not something Pineapple and Coconut. Because I am after all, Pineapple and Coconut. I tested this champagne cocktail recipe out a few different ways, one with my pineapple simple syrup and coconut milk, one with the syrup and coconut juice and one with pineapple and coconut juices.

The Champagne Piña Colada was created in anticipation of London bar Coupette opening its doors in 2017, and despite the esteemed venue refreshing its menu once a year, the team just cant get rid of the serve its very popular, says bar manager Andrei Marcu.

He explains that the cocktail is the perfect balance between sweet, sour and fruity notes as well as being vegan.

The recipe includes frozen coconut sorbet, as a means to keep the temperature as low as possible, while ensuring it retains its fragrant, creamy smoothness. Its a very refined drink very minimalistic in terms of flavours.

At the same time, its a very beach vibes drink. If Im at the seaside and I have someone making frozen Champagne Piña Coladas around me, I will live next to that stall.

The creamy serve is always going to be a best seller, Marcu affirms. Once we find the balance of a drink, the best you can get out of that drink, we dont play around with it, he adds.

Flavour is a large focus of cocktail crafting at Coupette. The bar does not dress up drinks with garnishing or exquisite glassware, but rather always aims for flavour.

Various bartenders and consumers around the world have even replicated the drink and Coupette welcomes this.

Lavender Honey Hot Toddy

The Place: Manzanita at The Ritz-Carlton, Lake Tahoe

Ingredients:

  • Zest of 2 limes

How to Make the Syrup:

Combine ingredients and bring to a boil on the stovetop. Boil until blueberries burst, remove from heat, and strain through a fine-mesh strainer.

How to Make the Cocktail:

Mix 2 ounces of the tea-infused vodka into a cocktail shaker filled with ice. Add blueberry lavender lemonade and shake vigorously for 10 seconds. Strain over fresh ice in your favorite cocktail glass. Garnish with a lemon wedge and fresh blueberries.

I added simple pineapple juice from the can for this recipe. If youre making and serving this punch right away, make sure you chill the juice first, as this champagne punch tastes the best served very cold.

How To Serve A Pia Colada

Serving these Pina Coladas is part of the fun! Add a dark rum floater to the top after you pour them into glasses. The dark rum adds such great flavor to this cocktail, and also adds a nice color.

You can leave the dark rum on top and let it sink down into your drink as you sip it or stir it right in. Then add your straw, cherry and paper umbrella and youre on your way to the islands.

    Since we wont be taking a tropical vacation anytime soon, Ill be making this easy frozen piña colada recipe. When I have one of these in my hand and close my eyes, I can almost feel those warm ocean breezes! This is the perfect cocktail to pretend youre on the beach.

    Plus it has just THREE ingredients and you can make it non-alcoholic easily!

    You dont need one of those premade pina colada mixes you can buy at the store making it from scratch is super easy. This is the best pina colada recipe and I always have the ingredients on hand so I can whip one up whenever I want.

    • Pineapple juice

    For the coconut cream, I use Coco Real Cream of Coconut which is sold in squeeze bottles. I like it because it tastes great and it also keeps well in the refrigerator and doesnt separate.

    For some freshness you could add a squeeze of lime!

    Make It A Pia Colada Mocktail

    You can easily leave out the rum and have a non-alcoholic piña colada. Just make the drink as directed and just skip the alcohol. My daughter LOVES having a fancy cocktail thats safe for her to drink.

    If I have friends over, Ill blend the juice, coconut cream and ice and then serve the virgin ones to my friends who want one. Then Ill add the alcohol, blend again and serve up the regular ones. Or, just add the rum right on top in the serving glass, like they do at the fancy resorts.

    A Few Notes Before The Very Simple Pineapple And Coconut Champagne Cocktail Recipe:

    Pina Colada Mimosas | Delish
    • I used R.W Knudsen Just Pineapple and Coconut Nectar juices for these cocktails. I have hear the coconut is harder to find these days
    • Lakewood organics also makes a coconut juice blend. You want just the coconut juice blend if you can get it.
    • R.W. Knudsen does make a Pineapple and Coconut juice blend and you could use that in a pinch if you can’t find the other ones. It is sweeter so you might want to add just a but more plain pineapple juice or even a splash of lemon juice.
    • There are some brands that make coconut nectar but these are more often substitutes for pancake syrup NOT a juice blend for a cocktail
    • There are also brands that make coconut juice but they are more often clear like coconut juice and won’t work as well. There are a few Thai brands that make canned coconut juice that are more like a whitish colored nectar that would work.
    • You could also substitute something like So Delicious sweetened coconut milk beverage. I haven’t tried this version so I can’t tell you if it is good.
    • L& A is another brand that has a pineapple and coconut juice blend
    • I wouldn’t use Coco Lopez cream of coconut, that would be way too sweet, unless you only use a tablespoon or so, shake it well with pineapple juice in a cocktail shake full of ice, then pour into glasses then fill with prosecco. I should try that to see if that is a great option. If any of you try it, let me know!

    Whats In A Pia Colada

    Super simple, this tropical cocktail only requires a few ingredients!

    White Rum and Dark Rum: So you only need dark rum if you want to do a floater like weve shown here, and I definitely recommend that you do! Otherwise you only need white rum.

    Pineapple Juice: Just grab your favorite brand at the store, you can also switch it up by using a pineapple juice blend.

    Cream of Coconut: Usually we can find this right at the grocery store in the beverage aisle. You can also swap out coconut milk as well.

    Heavy Cream: We like our Pina Coladas super creamy, so we added just a touch of heavy cream. Cream is an optional ingredient, so if you dont have it its not completely needed, it just adds a little extra richness.

    And dont forget about the garnish! If youre serving a Pina Colada, you cant just pour it into a glass and be done. Garnish these frozen drinks with a maraschino cherry and those fun paper umbrellas!

    Itll seem like your on that beach vacation right in your backyard.

    Sparkling Pina Colada Step

  • Take a small plate and add equal amounts of sugar and coconut flakes, blending them both together on the plate as best you can.
  • Wet the rims of the tiki glasses you are going to be using, and then immediately place them onto the plate of coconut flakes and sugar, until each rim has been coated evenly.
  • Pour of each glass with your champagne of choice.
  • Grab your cocktail shaker and add crushed ice, pineapple juice, lime juice, and rum, and give a good shake until mixed.
  • Pour into the tiki glasses.
  • Top with a final drop of champagne, as this will give the drink a foamy head. Garnish with your choice of either pineapple, pineapple leaves, or even a playful umbrella!
